Changurro de Centollo Changurro Spider Crab
Changurro se denomina a las recetas que se hacen a base de carne de Centollo desmenuzado
Ingredientes Para 4 personas:
4 centollos pequeños ó 1 centollo de 1 kg.
Elegirlos a ser posible vivos y sin que les falte ninguna pata, ya que al cocerlos si le faltase alguna parte, perdería sabor al entrar agua dentro del centollo durante la cocción, y se perderían sabores en el agua de cocción.
250 gr de salsa de tomate frito. O dos tomates escaldados en agua.
1 cebolla
2 puerros.
1 diente de ajo
1 copa de coñac/brandy
1/2 vaso de vino blanco seco
aceite de oliva.
mantequilla.
Unas gotas de tabasco. (Opcional)
pan rallado.
Perejil fresco
1 ó 2 hojas de laurel.
Sal.
Preparación:
Cocer los centollos en agua hirviendo con sal y el laurel durante 10 minutos aproximadamente (si el centollo es grande el tiempo de cocción oscilará entre 20 y 25 minutos aproximadamente), sacarlos del agua y dejar que se enfríen para poder manipularlos.
Ya atemperados, abrirlos, extraer toda la carne del caparazón y de las patas, picarla finamente y reservar.
Limpiar los puerros, desechando la parte verde, y picar la parte blanca, Calentar aceite en una sartén y rehogar en él los puerros, la cebolla y el diente de ajo. Todo troceado muy fino, Rehogar todo unos minutos; Ahora añadimos la carne picada del centollo, la salsa de tomate, o los dos tomates troceados, mezclamos bien y añadimos el coñac/brandy, flambeándolo; Una vez se apague la llama, añadir el vino blanco seco y rehogar, a fuego suave, para que la carne se impregne bien de todos los sabores. Cuando esté ya en su punto, entre 5 y 10 min, sazonar con unas gotas de tabasco (opcional).
Limpiar bien los caparazones del centollo y rellenarlos, con el guiso que tenemos, espolvorear por encima, pan rallado mezclado con el perejil, poner una pizca de mantequilla en cada uno y gratinarlos en el grill durante 2 ó 3 minutos.
Servir con un buen vino blanco fresquito, a ser posible afrutado, al menos a mi así me gusta.

Fresh parsley
1 or 2 bay leaves.
Salt.
Preparation:
Cook the spider crab in boiling water with salt and laurel for about 10 minutes (if the spider crab is large, the cooking time will vary between 20 and 25 minutes), remove them from the water and allow them to cool so they can be handled.
Once tempered, open them, extract all the meat from the shell and the legs, finely chop and reserve.
Clean the leeks, discarding the green part, and chop the white part, Heat oil in a pan and sauté the leeks, onion and garlic clove. All sliced very thin, sauté all a few minutes; Now add the minced crab meat, the tomato sauce, or the two chopped tomatoes, mix well and add the brandy / cognac, flaming it; Once the flame is extinguished, add the dry white wine and sauté, over a low heat, so that the meat is well impregnated with all the flavors. When it is already at its point, between 5 and 10 min, season with a few drops of Tabasco (optional).
Clean well the crab shells and fill them, sprinkle on top, breadcrumbs mixed with the parsley, put a pinch of butter on each and gratin for 2 or 3 minutes.
Serve with a good fresh white wine, preferably fruity,
