Pisto
Según he leído, el pisto llega en época califal Al-Andalus en el año 206 de la Egira, 822 de nuestra Era.
Zizyab dio a conocer en España la receta del plato que se sirvió en la boda de la princesa Al-Buran con el califa abbasi Al-Ma'mün, hijo de Harum-al-Rasid, califa de Las Mil y Una Noches. Este plato creado para tal ocasión, al cual se le llamó al-burmayya, en honor a la princesa desposada, llegó hasta nuestros días con el nombre de alboronía y se confeccionaba una fritura en aceite de oliva de berengenas, calabacines, cebolla y membrillo, cambiando en el siglo XVI el membrillo por tomate y pimiento, naciendo así el popular pisto, llegando hasta nuestros dias. Sin duda el mas famoso es el Pisto Manchego
PISTO TRADICIONAL INGREDIENTES
- 4 tomates maduros,
- 2 cebollas
- 2 dientes de ajo
- 2 pimientos verdes
- 1 pimiento rojo
- 2 calabacines
- 2 Berenjenas
- aceite de oliva
- un poco de azúcar
- sal
- Pimienta negra molida
- Orégano
- Huevos (Opcional)
Preparación:
Escaldar los tomates en agua caliente, quitarles la piel y trocearlos, trocitos pequeñitos. reservar
Pelar y trocear las cebollas, ajos, berenjenas y los calabacines en dados. Limpiar bien los pimientos de pepitas y trocearlos.
Ponemos en una olla, 4 cucharadas soperas de buen aceite de oliva virgen. y Sofreir a fuego moderado las berenjenas, un par de minutos, añadir los ajos y la cebolla, otro par de minutos y seguir refriendo a fuego lento. A continuación añadir los pimientos y seguir cocinando unos 5 minutos más. seguidamente añadir el calabacín y seguimos sofriendo un par de minutos, removiendo continuamente para que no se queme la cebolla, añadir entonces el tomate. Cocinar unos 15 minutos más, hasta que se haga el tomate y reduzca el agua.
Agreganos una cuchara pequeña de azúcar (para quitar la acidez del tomate), la misma cantidad de sal, y el orégano (opcional), dejar reducir a fuego lento y apartar del fuego, cuando las verduras estén tiernas.
Se le puede añadir un huevo crudo, para que con el calor residual de la olla se haga, lo que se llama un huevo cuajado.
Servir en una cazuela de barro

TRADITIONAL TRACK INGREDIENTS
- 4 ripe tomatoes,
- 2 onions
- 2 cloves of garlic
- 2 green peppers
- 1 red pepper
- 2 zucchini
- 2 Eggplants
- olive oil
- a bit of sugar
- Salt
- Ground black pepper
- Oregano
- Eggs (Optional)
Preparation:
Blanch the tomatoes in hot water, remove the skin and chop them, tiny pieces. Reserve
Peel and chop the onions, garlic, aubergines and diced zucchini. Clean the peppers well and chop them.
We put in a pot, 4 tablespoons of good virgin olive oil. and Lightly sauté the aubergines, a couple of minutes, add the garlic and onion, another couple of minutes and continue refining at low heat. Then add the peppers and continue cooking for 5 minutes more. then add the zucchini and continue sautéing a couple of minutes, stirring continuously so that the onion does not burn, then add the tomato. Cook about 15 minutes more, until the tomato is made and reduce the water.
Add a small spoon of sugar (to remove the acidity of the tomato), the same amount of salt, and oregano (optional), reduce to a simmer and remove from the heat, when the vegetables are tender.
You can add a raw egg, so that with the residual heat of the pot is made, what is called a curdled egg.
Serve in a clay pot
